So, I've got 15" wheels on my Swift GTi.
I really would love to widen my stance, (benefits could be listed, but frankly, I'm tired, and will stick to, It would look cool!) (..and cornering)

I was looking at these 2" spacers, but I know that they'd rub up on the fender well, and that's a no-no.
Does anyone know of a fix for this?

I have 20mm spacer on the rear of my turboed gti. The seven spokes are on that car. I had to cut the inner fender, because it rubbed.
Remember the studs are 19mm long.

Investigate scrub radius and it's effect on components. Honestly, as you are asking this question, later model sedan sway bars. You can lift the inner turn rear tire at 50 mph while jabbing the brakes and have complete control if you're a good driver.
